It's rather simple. The trigger would look something like this:
Events
Unit gets item
Conditions
Type of item is ITEM1
Triggering unit has item type of ITEM2 equal to true
Actions
Remove item beeing manipulated
Remove item of type of ITEM2
Create a ITEM3 and give it the triggering unit
