Blades in real life
All blades that are meant for battle are made this way. (European swords, scimitars, Japanese swords etc) The thickness in the central part of the blade is thicker and then changes the angle to the edge to make it sharp.

This way it can cut through enemies and still be able to take a few hits without breaking apart. A normal knife is not constructed this way, they are simply made to slice through with precision, sharpness and reduced resistance.

The artistic part:
Since the sharp edge has a different angle it gives a different light reflection or shadow as shown in this:

Different reflection means different color. Simple ;)
