The quickest way would be to do what demonsofdante said. But it's possible to change any doddad's model and make the doddad walkable. Then you would have to place pathingblockers around, else the unit's walking on it could ''fall'' down at any time by just walking to the edge of the log.
If you are going to use a (singular) log then do as they suggest above.
If you are going to build a log bridge then you will need to set all of the pathing for each part of your bridge to none - then go back in and use pathing blockers to build a "wall" along the sides and invisible platforms to build a walkable surface.
This works best if you flatten the terrain completely where you are planning on building your structure. Using CTRL + page up or Page down to raise and lower doodads.
Make a copy of those doodads you use for your bridge - that way you can still use say logs elsewhere in your map.
Hint. To line up and set doodads squarely or neatly side by side assign them the Barrel pathing (or similar) it allows you to place things easily and neatly.
Hint 2: in many instances you can stack your doodads, then temporarily give them a pathing - this will cause them to align neatly. then remove pathing. I strongly suggest you play around with this before you spend hours stacking many doodads to align them to find that that was not what you really wanted.
