How to do that^ (even during shift/options), but still make the unit targetable?

try setting health to negative amount don't know if it helps but a guess

If the unit is invulnerable I believe the health bar is hidden.

Also if you set the selection value of the unit to -1 it hides it, but the green circle around the unit is somewhat sacrificed in doing so.

As far as I know, it's only possible for buildings, just give invulnerability.
