LiOneSS: There are fossils, they're just not of dragons. Fossils are the origins of most dragon myths. Like the greeks found a mammoth fossil and thought it was a giant.

When a dragon needs to freeze an opponent, the highly compressed nitrogen, that almost reach the liquid state, is release in the lungs and when the gas comes into air, it uncompresses at an unimaginable speed. That result in the gas absorbs all the heat in is environment. This cause the temperature in the breath to drop to an average of -50 °C (more test had to be made to know a more exact °T), anyone caught in the path of the breath without heavy heat protection are at least seriously injured and only death remain for the weaker one.
It may have another explanation that can be explain by extremely efficient and fast oxidation-reduction reactions but we will not explain it much (everyone who has done is advanced inorganic chemistry should understand the concept otherwise you should review or have listen your college class)

Acid Spiter Dragon Acid Breather:
The easiest of them, all organic creature secrete gastric acid to break down the food, dragon who can spit acid have a special organ that produce a powerful acid (probably HCl) that the dragon release when he breathe, the opponent is burn by the acid, even with the best armor usually make of metal that make bad reaction with acid.
For other breath weapon least know follow the same principle and don't need much detail about them.
I made one observation during my research: it seems to have a direct link between the breath and the food, if a dragon is starving his breath weapon doesn't regenerate. All the incredible system of dragon makes it the most fascinating creature in the know universe.

Bwahahahaha, having methane in the lungs? Methane has the potential to combust explosively, it would be too dangerous for young inexperienced dragons to have it in their lungs, aside from the fact that any sort of prolonged fire breathing would stop the dragon from being able to breathe, as well as the fact that there isn't any significant amount of methane created in most mammals, as well as the fact that methane is created by bacteria in the colon, ie the large intestine. They should have given them another organ entirely instead.

It takes an incredible amount of pressure for nitrogen to be compressed any significant amount, much less into liquid phase. When liquid nitrogen evaporates, it expands at least by something like 400 times. The dragon would probably explode first.

About the acid, not every organic creature secretes acid. There's some species of mammal that eats termites, and it doesn't secrete acid; it lets the termite's own acid accumulate. I'm bringing this up mostly to be a smartass, because I can't think of any other animal that doesn't produce acid in their stomachs.
